Mountain to Mountain: exchanges on culture, food and living territories

In Kosovo, there are three categories of cheese making. The most valuable is mountain cheese production, followed by artisanal cheese makers in the lowlands, and lastly, fabrication cheese making. In the third edition of the Autostrada Biennale (2021), INLAND carried a research the Sharri mountain cheese producers. Without intervening, we met with local cheese producers, conducted interviews, collected information, and mapped the problems they faced.

The panel will focus on cheese production changes for mountain and lowland (artisanal) cheese makers over the years. Shepherds producing Sharri Mountains cheese, Jeton Jagxhiu, a cheese maker from the lowlands, and Fernando Garcia Dory will discuss how to protect local cheese-making traditions and the differences in production methods from global regulations. With Kosovo aiming to join the European Union, there are concerns about applying these regulations to mountain cheese-making without losing its unique characteristics. Fernando Garcia Dory will share his experiences and examples from different countries on how they handle these regulations and possible solutions.
